An oil worth leaving Sardinia and travelling to mainland Italy for!

 

Having had the good fortune to meet Mario and try his oil, we had no choice but to add this wonderful extra virgin organic oil from Lazio to our selection.  

 

Mario is passionate about his production.  Experimentation with different blends of DOP olives all maturing at slightly different times, the use of a renowned local press and the immediate filtering and bottling of his oil are just some of the ways in which Mario ensures a finely balanced, wonderfully fresh olive oil.

 

Mario's production is certified organic.

 

Every stage, from cultivation to bottling, is done with passion, care and attention to detail.  We are sure that you can taste the love! 

 

 

  • Olive varieties; Leccino, Frantoio, Canino, Maurino and Moraiolo.

  • Picked by hand or mechanical shaker between 8.00 and 16.00.

  • Olives transported to mill in small 5 kg aerated crates.

  • Cold-pressed in a continuous cycle Pieralisi Tiger press within 6 hours of picking.

  • Stored in a controlled environment before bottling.

  • Light green in colour.

  • Fruttato medio/intenso.
